Bandon Dunes Golf Resort...

Thanksgiving was spent a little different this year.  We cancelled our trip to Southern California to see our family.  Due to Covid-19, we decided to stay home. I didn't cook.  I didn't do any hosting.  We decided to go on a road trip to Southern Oregon.  It was our last minute decision but all things lined up and ENK reserved two days of golf at the best golf resort in Oregon. Yes, the boys joined.  No, the boys say that I, joined them.  Whatever the original plan, we had a fabulous time!

Hospitality Industry....

We are going through some tough times here in the restaurant/hospitality industry due to current Covid-19 situation.  The state of Oregon has issued another 2 weeks moratorium on dining in at a restaurant.  I have enjoyed the phase I state where customers were able to sit and dine=in.  We have done this "take out" only phase before so we can pull through.  At times, I wonder how I got in this restaurant business.  You can tell a lot by the way one treats the person that serves them.  I've had people that are demanding, entitled and just rude to me when I serve them.  But I treat all my customers with respect and kindness.  Even if they say, "where is the ketchup?"  I run to grab it for them even though I can tell them where it is.  We will get through this...  IMG_7423

Entertaining with a view... Flan de queso!

I made Flan de queso:

Preheat oven to 375 degrees

Boil water and prepare and set aside

Prepare oven safe baking dish big enough to use as water bath

1 can of Evaporated Milk

1 can of Condensed Milk

1 package of Philadelphia Cream Cheese (room temperature)

6 eggs  (4 whole and 2 egg yolk)

1 tsp vanilla extract

Mix all ingredients in vitamix and pulsate 3 times to bind all until smooth.

3/4 cup of sugar in pan and melt over medium heat until caramel is an even golden brown color.

Quickly pour into 9" round flan mold/pan; swirl so that carmel reaches 1 inch up to the sides.  pour condensed milk mixture on top.  Place mold in the pot of boiling water.

Bake flan in the preheated oven until a toothpick comes out clean.  45 minutes to 1 hour.  Remove from oven and let stand.  Chill flan to firm.

Invert flan after running knife around  onto a plate and serve.
