Mung Bean Pancake aka "Bindaettuck" ...

I made this for the first time.  I didn't know how much of mung beans I needed to grind.  At first, I made it too coarse, then I had to soak more beans and added to the mix.  This process took little longer than anticipated.  But the end result was that it was delicious.  It was thick just like the Kwangjang market style from our Korea trip last year.  I diced flank steak and seasoned it, added kimchi, sprouts, scallions and carrots.  If you have Korean pancake mix,  you can add it to make the consistency to make it thicker.  I had to add a cup of this boochim garu, and this did the trick.  Since it was my first time, I didn't quite know how to make it thick like a pancake batter.  Overall, loved the taste and the texture.  Glad I had the coarse mung beans with the second batch of creamy mung beans!

Sweet and Sour Beef (tangsuyuk)...

Tangsuyuk is a Korean Chinese dish that goes with Jjajianmyun.  It's kid's favorite dish when we go out.  But this is particularly tasty when made at home.  

There are few tips to make the batter very crispy. (Beef, chicken or mushroom would be great) 

Need a cup of potato starch.  

1 cup of starch, add water to cover. Mix the ingredients and let it sit for hours.  Allow the starch to be on the bottom and water to float at the top.  

discard the water, add 1 egg white, a teaspoon of oil.  (it would be hard as cement or mud.  you need to work it to mix well)

Cut beef and season:  kosher salt, ground black pepper, cooking wine and set aside

Prepare vegetables for sauce: onion, cucumber, pineapple, green and red bell peppers: sauce in pan, add 3 cups of water, add  2 teaspoon of soy sauce, 2 T apple cider vinegar,  1/4 cup of sugar, and starch water and thicken the sauce.  

Optional:  Napa cabbage, wood ear mushrooms, apples 

add seasoned beef/mushrooms into the starch mixture and deep fry.  Double fry would be best to make it crispy!  Pour sauce over the crunchy fried beef and serve!  


Fried Chicken Recipe....

2 bags of Costco Wings:

Brine:

Gallon of water

1 Cup of kosher salt

1 Cup of sugar

 

 Thin Batter:

2 Cup of Flour (Rice Flour ok) 

2 Cup of Cornstarch

1 T  ground black pepper

3/4 T paprika

½  T cayenne pepper

 1 ¾ T baking powder

½ T  kosher salt

1 -1 1.5 Cups of cold water

 

Sauce:  3 tbs ketchup 4 Tb soy 1 tb of gochujang 1/4 honey, 1/4 brown sugar 1 clove of garlic 1 Tbs sesame oil

Entertaining with a view... Flan de queso!

I made Flan de queso:   

Preheat oven to 375 degrees

Boil water and prepare and set aside 

Prepare oven safe baking dish big enough to use as water bath 

1 can of Evaporated Milk

1 can of Condensed Milk

1 package of Philadelphia Cream Cheese (room temperature)

6 eggs  (4 whole and 2 egg yolk) 

1 tsp vanilla extract

Mix all ingredients in vitamix and pulsate 3 times to bind all until smooth. 


Caramel: 

3/4 cup of sugar in pan and melt over medium heat until caramel is an even golden brown color.  

Quickly pour into 9" round flan mold/pan; swirl so that carmel reaches 1 inch up to the sides.  pour condensed milk mixture on top.  Place mold in the pot of boiling water. 

Bake flan in the preheated oven until a toothpick comes out clean.  45 minutes to 1 hour.  Remove from oven and let stand.  Chill flan to firm. 

Invert flan after running knife around  onto a plate and serve.
