Sue's Granola Recipe...


I have been making this granola for more than 10 years.  It's called an overnight recipe since I make it at night, into the oven all night long.  



Sue’s Overnight Granola:


2 Cups of Rolled Oats (Grocery Store) 

2 Cups of Pecans  (Costco)  (break apart)

1-2  Cup of Sliced Almonds (Costco)

1-2  Cup of Slivered Almonds (Trader Joe’s) 

2 Cups of sliced or shredded coconuts (Trader Joe’s) 

1 Cup of Pumpkin Seeds (Trader Joe’s)

1 Cup of Sunflower Seeds (Trader Joes)

1 Cup of Wheat germ or Crushed Flax seed (Costco or TJ)

1 Cup of Brown Sugar



1 Cup of Vegetable Oil

½ Cup of warm water

½  Cup of Honey

2 teaspoon of Vanilla Extract

2 teaspoon of Maple Syrup


Mix wet with dry in a big bowl

Spread on parchment paper


200 degrees for 8-9 hours (overnight) 


Granola is very personal.  Add what you love!



Porsche 914


This is ENK's 1974 Porsche 914.  It was yellow.  VERY yellow for years.  He wanted to paint it VERY ORANGE for years.  He finally decided on this silver metallic blue color.  I think it looks mighty fine.  I can't wait for all his cars to come home. One is being painted and the other is getting it's body work done nearby.   We'll figure out how to store these babies. 

Philz... where were you?

While in San Diego, we went to Philz Coffee for the first time.  Salina recommended that we try the mint mojito iced coffee.  This was just smooth and delicious.  I've been thinking about this ever since I came back.  Mint Mojito is known to be sweet and creamy yes but I've never tasted anything like it.  

iced coffee and refrigerate or make your own cold brew  Mm

fresh mint syrup
1 cup water
1 cup sugar
1 big bunch of fresh mint leaves (around 3/4 cup)
1 vanilla bean, seeds scraped

 (combine all of the above in saucepan until sugar dissolves and let it cool in room temperature.  Refrigerate for later use) 


Cup of Mint Iced Mojito:

Add 2-3 tablespoon of mint syrup into 8 ounces of coffee concentrate

add 3 tablespoon of milk or cream and mint leaves for garnish and use coffee ice cubes to get cold.
